Ingredients

The salad

  • cups cooked quinoa
  • 2 Tablespoons extra virgin olive oil
  • 1 pound skinless boneless chicken breasts, cut into 1-inch pieces
  • 2 cloves garlic or roasted garlic, finely chopped
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • 2 large oranges, peeled and segmented
  • 1 ripe avocado, sliced or cubed

The dressing

  • ¼ cup lime juice
  • cup chopped fresh cilantro (packed)
  • 1 Tablespoon orange juice
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon honey

Instructions

  1. Cook quinoa according to package directions and let it cool in a large bowl.
  2. Heat olive oil in a large skillet over medium heat, add chicken and garlic, and cook until chicken is done, about 8 minutes.
  3. Combine cooked chicken, oranges, and avocado with the quinoa and stir to mix.
  4. Whisk together the dressing ingredients and pour over the salad, tossing to coat.
  5. Serve immediately or refrigerate for 4-5 days.
