Instructions
- Squeeze juice from the orange, lemon, and lime into a non-reactive pan, then add cumin, honey, garlic, onion, oil, and herbs. Whisk together and season with salt and pepper.
- Refrigerate the marinade until ready to use.
- Season chicken with salt and pepper, then marinate the chicken thighs in about 2/3 of the marinade for 30 minutes to 4 hours in the fridge.
- Heat a grill pan or skillet, coat with oil, and cook the bell pepper for about 3 minutes. Remove and set aside.
- Wipe the pan and coat it with cooking spray. Grill the marinated chicken for about 8 minutes on each side or until cooked through.
- Slice the chicken into ¼-inch thick pieces.
- On a large plate, arrange the romaine lettuce, grilled chicken, sliced avocado, tangerines, and bell pepper. Serve with the remaining citrus dressing on the side.
