Chicken Citrus Avocado Salad

Ingredients

Chicken Marinade and Dressing

  • 1 medium Orange
  • 1 medium Lemon
  • 1 medium Lime
  • 1 teaspoon minced garlic
  • ¼ cup small diced onion
  • ½ - 1 teaspoon cumin
  • ¼ cup olive oil
  • 1 tablespoon honey
  • 2 tablespoons fresh herbs (cilantro or parsley)
  • to taste Salt and pepper

Salad

  • 2-3 boneless skinless chicken thighs
  • 3-4 cups chopped Romaine lettuce
  • 1 large Avocado (sliced)
  • 2 or more Tangerines (peeled)
  • 1 medium red bell pepper (sliced)

Instructions

  1. Squeeze juice from the orange, lemon, and lime into a non-reactive pan, then add cumin, honey, garlic, onion, oil, and herbs. Whisk together and season with salt and pepper.
  2. Refrigerate the marinade until ready to use.
  3. Season chicken with salt and pepper, then marinate the chicken thighs in about 2/3 of the marinade for 30 minutes to 4 hours in the fridge.
  4. Heat a grill pan or skillet, coat with oil, and cook the bell pepper for about 3 minutes. Remove and set aside.
  5. Wipe the pan and coat it with cooking spray. Grill the marinated chicken for about 8 minutes on each side or until cooked through.
  6. Slice the chicken into ¼-inch thick pieces.
  7. On a large plate, arrange the romaine lettuce, grilled chicken, sliced avocado, tangerines, and bell pepper. Serve with the remaining citrus dressing on the side.
