Sweet Citrus Chicken Salad

The salad

The dressing

thawed frozen orange juice concentrate

light olive oil
Instructions
- Combine chicken, celery, green onion, and cranberries in a bowl and set aside.
- Whisk together orange juice concentrate and olive oil until smooth.
- Pour the dressing over the chicken mixture and combine, using as much dressing as desired.
- Season with salt and pepper to taste.
- Chill the salad for at least 2 hours.
- Before serving, gently mix in the toasted almonds.
