Ingredients

  • 1 12.5 oz. can chicken breast, drained
  • ¼ cup dried cranberries
  • 2 Tbsp chopped almonds
  • cup mandarin oranges
  • 2 Tbsp avocado mayo
  • to taste salt & pepper
  • as needed Celery Sticks for dipping

Instructions

  1. Open the can of chicken and drain the water.
  2. Place the chicken in a medium bowl and shred it with a fork.
  3. Add the dried cranberries, chopped almonds, mandarin oranges, and avocado mayo to the bowl and mix well.
  4. Season with salt and pepper to taste.
  5. Spoon the mixture into celery sticks to create Chicken Salad Logs, or use celery sticks as dippers.
