Instructions
- Prepare the chicken by placing it in a pot, covering with water, and boiling until cooked through.
- While the chicken cools, mix the dressing ingredients in a bowl.
- Chop or shred the chicken into bite-sized pieces.
- In a large bowl, combine the chicken, dried cranberries, walnuts, celery, and scallions.
- Pour the dressing over the salad mixture and stir to coat.
- Chill the salad in the refrigerator until ready to serve.
