Ingredients

The salad

  • ½ medium cucumber
  • ½ medium red onion
  • ¼ cup fresh minced cilantro or parsley
  • 1 cup pomegranate arils
  • 1 can garbanzo beans or great northern beans
  • 1 cup quinoa
  • 2 cups water or broth
  • 1-2 medium avocados
  • to taste kosher salt
  • to taste freshly ground black pepper

The dressing

  • ½ cup freshly squeezed orange juice
  • tablespoons freshly squeezed lemon juice
  • tablespoons freshly squeezed lime juice
  • 2-3 teaspoons sugar, honey, agave, or Splenda
  • 2 tablespoons pure olive oil
  • ½ heaping teaspoon kosher salt
  • to taste freshly ground black pepper
  • 1 clove minced garlic

Instructions

  1. Whisk together the dressing ingredients and set aside.
  2. In a large bowl, combine the diced cucumber, minced onion, chopped cilantro, pomegranate seeds, and drained beans.
  3. Toss the mixture with the cooked quinoa.
  4. Drizzle the dressing over the salad and toss to combine.
  5. Chill until ready to serve.
  6. Before serving, add diced avocado and serve immediately.
