Ingredients

The smoothie

  • 1 cup frozen raspberries or strawberries
  • 1 medium banana
  • cup raw coconut meat (optional)
  • 1 cup coconut milk
  • 1 cup frozen mango chunks
  • 1 - 1 ½ cups fresh pineapple juice
  • 1 unit vanilla bean (seeds scraped)
  • ½ unit pineapple (cubed, optional)
  • 1 unit kiwi (sliced, optional)
  • 1 - 2 tablespoons ground flax (optional)

Simple Coconut Granola (optional)

  • 3 cups rolled oats
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup raw whole almonds
  • ¼ cup coconut oil
  • ¾ cup pure maple syrup
  • 1 teaspoon instant espresso
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons honey

Instructions

  1. Blend the raspberries, banana, coconut meat, and coconut milk until smooth.
  2. Pour the raspberry smoothie into two glasses.
  3. Wash the blender and blend the mango chunks, pineapple juice, and vanilla bean seeds until smooth.
  4. If needed, add more pineapple juice to thin the mixture.
  5. Pour the mango smoothie over the raspberry layer and gently mix if desired.
  6. Garnish with pineapple cubes on skewers and a kiwi slice on the rim.
  7. Sprinkle with flax and granola if using.
