Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 1 cup oat flour
  • ¼ cup coconut flour
  • tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • 2 large eggs
  • 1 cup unsweetened pear puree (or unsweetened applesauce)
  • 1 cup plain Greek yogurt
  • cup unpasteurized honey
  • ¼ cup coconut oil, melted
  • 1 tbsp pure vanilla extract
  • 5-6 drops pure almond extract

Add-ins

  • 1 small pear, cubed
  • ½ cup sliced almonds, plus more for garnish

Instructions

  1. Preheat the oven to 375°F and line a 12-cup muffin pan with large parchment paper cups.
  2. In a large mixing bowl, whisk together the eggs, pear puree, Greek yogurt, honey, melted coconut oil, vanilla extract, and almond extract until well combined.
  3. In a separate bowl, mix the almond flour, oat flour, coconut flour, baking powder, and salt until lump-free.
  4. Combine the dry ingredients with the wet ingredients and mix well, then gently fold in the pear cubes and sliced almonds.
  5. Divide the batter among the muffin cups and top with additional sliced almonds if desired.
  6. Bake for 28 to 30 minutes until golden and a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the pan for at least 45 minutes before removing.
