Instructions
- Preheat the oven to 375°F and line a 12-cup muffin pan with large parchment paper cups.
- In a large mixing bowl, whisk together the eggs, pear puree, Greek yogurt, honey, melted coconut oil, vanilla extract, and almond extract until well combined.
- In a separate bowl, mix the almond flour, oat flour, coconut flour, baking powder, and salt until lump-free.
- Combine the dry ingredients with the wet ingredients and mix well, then gently fold in the pear cubes and sliced almonds.
- Divide the batter among the muffin cups and top with additional sliced almonds if desired.
- Bake for 28 to 30 minutes until golden and a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for at least 45 minutes before removing.
