Instructions
- Preheat the oven to 350°F.
- Boil salted water and cook the pasta shells according to package directions, reserving 1 cup of the cooking water.
- In a skillet, heat the oil and brown the ground beef, then add garlic and cook for an additional minute.
- Stir in the tomato paste, crushed tomatoes, and Italian seasoning, simmering for 10 minutes and adjusting with reserved pasta water as needed.
- In a bowl, mix ricotta, spinach, egg, parsley, and Parmesan, seasoning with salt and pepper.
- Stuff the mixture into the cooked pasta shells.
- Spread ⅓ of the meat sauce in a baking pan, arrange the stuffed shells on top, and cover with remaining sauce and mozzarella cheese.
- Bake for 30 minutes and let cool for 5 to 10 minutes before serving.
