Ingredients

The pasta

  • 9 ounces jumbo pasta shells

The meat sauce

  • 1 tablespoon olive oil or avocado oil
  • 16 ounces lean ground beef
  • 1 tablespoon minced garlic
  • 6 ounces tomato paste
  • 28 ounces crushed tomatoes
  • 1 tablespoon Italian seasoning

The cheese filling

  • 15 ounces ricotta cheese
  • 10 ounces chopped frozen spinach, thawed and drained
  • 1 large egg, beaten
  • 2 tablespoons chopped parsley
  • cup grated Parmesan cheese

The topping

  • 1 ½ cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Boil salted water and cook the pasta shells according to package directions, reserving 1 cup of the cooking water.
  3. In a skillet, heat the oil and brown the ground beef, then add garlic and cook for an additional minute.
  4. Stir in the tomato paste, crushed tomatoes, and Italian seasoning, simmering for 10 minutes and adjusting with reserved pasta water as needed.
  5. In a bowl, mix ricotta, spinach, egg, parsley, and Parmesan, seasoning with salt and pepper.
  6. Stuff the mixture into the cooked pasta shells.
  7. Spread ⅓ of the meat sauce in a baking pan, arrange the stuffed shells on top, and cover with remaining sauce and mozzarella cheese.
  8. Bake for 30 minutes and let cool for 5 to 10 minutes before serving.
