Grilled Tandoori Chicken Thighs

Ingredients

  • 1 lb chicken thighs
  • 1 cup plain low fat greek yogurt
  • 2 tbs fresh lemon juice
  • 1 large lemon zest
  • 1 tbsp minced fresh ginger
  • 2 tsp minced garlic
  • 1 tsp ground turmeric
  • ½ tsp ground coriander
  • ½ tsp garam masala
  • ½ tsp sea salt
  • to taste fresh ground pepper

Instructions

  1. 1. Combine all ingredients except the chicken to create the marinade.
  2. 2. Marinate the chicken thighs in the yogurt dressing for at least 30 minutes.
  3. 3. Preheat the grill to 400 degrees and create direct and indirect cooking zones.
  4. 4. Coat the grill grates with canola oil or grill spray to prevent sticking.
  5. 5. Grill the chicken thighs on indirect heat for 4 minutes on each side or until the internal temperature reaches 160 degrees.
  6. 6. Grill the chicken on direct heat for 2 minutes per side to crisp the skin.
  7. 7. Remove from heat and tent under foil for 10 minutes.
