Nyonya Stewed Pork Ribs

Ingredients

  • 450 g pork spare ribs
  • 100 g shallots
  • 100 g fresh red chilies
  • 4 cups water
  • 3 tablespoons taucheo (bean paste)
  • 1 tablespoon tamarind pulp
  • ¼ cup water (for tamarind juice)
  • teaspoons sugar
  • to taste salt

Instructions

  1. 1. Heat a stew pot with 4 cups of water and bring it to a boil.
  2. 2. Add the shallots, chilies, and pork ribs to the boiling water.
  3. 3. Stir in the taucheo (bean paste) and bring the mixture back to a boil.
  4. 4. Reduce the heat to medium or low, cover with a lid, and slowly stew the ribs for about 1 hour or until the meat is tender.
  5. 5. Add tamarind juice, sugar, and salt to taste. Adjust the sourness by adding more water to the tamarind pulp if needed.
