Instructions
- 1. Heat a stew pot with 4 cups of water and bring it to a boil.
- 2. Add the shallots, chilies, and pork ribs to the boiling water.
- 3. Stir in the taucheo (bean paste) and bring the mixture back to a boil.
- 4. Reduce the heat to medium or low, cover with a lid, and slowly stew the ribs for about 1 hour or until the meat is tender.
- 5. Add tamarind juice, sugar, and salt to taste. Adjust the sourness by adding more water to the tamarind pulp if needed.
