Instructions
- Remove the membrane from the ribs using a butter knife and your hands.
- Marinate the ribs in a mixture of sweet thai chili sauce, soy sauce, red curry paste, fish sauce, ginger, garlic, and pepper for at least overnight.
- Preheat the oven to 300°F and bake the ribs covered for 2½ to 6 hours until tender.
- Prepare the Peanut BBQ Sauce by whisking together soy sauce, ketchup, peanut butter, sweet thai chili sauce, rice vinegar, red curry paste, Chinese 5 spice, lime juice, and cilantro.
- Prepare the Sweet Thai Ginger Slaw by combining cabbage, zucchini, peppers, jalapeno, cilantro, and basil in a bowl, then mixing a dressing of lime juice, rice wine vinegar, sweet thai chili sauce, peanut butter, fish sauce, soy sauce, and ginger to toss with the slaw.
- Grill the marinated ribs for 3-5 minutes per side after baking, until lightly charred.
- Serve the ribs with additional Peanut BBQ Sauce and the Thai Slaw.
