Ingredients

  • 2 racks baby back style ribs
  • 2 cloves minced garlic
  • 3 tablespoons freshly grated ginger
  • ¾ cup soy sauce
  • 1 cup freshly squeezed orange juice
  • 1 teaspoon orange marmalade
  • ¼ cup BBQ sauce
  • 1 unit the zest of an orange

Instructions

  1. Whisk the marinade ingredients together in a large dish and submerge the ribs, ensuring they are fully coated. Marinate in the fridge overnight for best results.
  2. Preheat your grill to about 275 degrees Fahrenheit the next day.
  3. Place the ribs on a foil pan and cook on indirect heat for about 45 to 60 minutes.
  4. In a saucepan, heat the leftover marinade, bringing it to a full boil for about 5 minutes, then simmer on low for another 15 to 20 minutes.
  5. Remove the ribs from the pan and place them directly on the grill. Brush with the prepared sauce and cook for about 10 minutes on medium-low heat until the sauce starts to caramelize.
