Raspberry Chipotle BBQ Ribs

Ingredients

The ribs

  • 9 to 12 pounds baby back or St. Louis cut pork ribs

The dry rub

  • 2 cups apple cider
  • ¼ cup sweet paprika
  • 3 tablespoons dark brown sugar
  • 2 tablespoons pepper
  • 1 tablespoon chile powder
  • 2 teaspoons garlic powder
  • 2 teaspoons dry mustard
  • 2 teaspoons celery salt
  • 1 teaspoon kosher salt
  • 1 teaspoon cayenne pepper

The sauce

  • 1 recipe Raspberry Chipotle BBQ Sauce

Instructions

  1. Combine all dry ingredients and rub generously over the ribs. Refrigerate for 4 hours or overnight.
  2. Preheat the oven to 250 degrees Fahrenheit. Place the ribs on a wire rack set on a baking sheet. Pour 1 cup of apple cider into the baking sheet and cook for 1 ½ hours.
  3. Add another cup of apple cider and cook for another 1 ½ hours or until the meat pulls apart from the bones.
  4. Preheat the grill to medium-high. Grill the ribs for 7-10 minutes on each side, basting with the Raspberry Chipotle BBQ Sauce. Serve warm.
