Instructions
- Set up your ceramic grill or smoker for indirect cooking and preheat it to 250°F.
- Remove the membrane from the ribs and pat them dry.
- Mix honey and mustard, then brush it over the ribs.
- Whisk the dry spices together and coat the ribs with the rub.
- Add hardwood chips to the coals and place the ribs on the grill, bone side down.
- Smoke the ribs for 2 hours at 250°F.
- Double-wrap the ribs in foil and smoke for another 2 hours.
- Remove the foil and place the ribs back on the grill to finish smoking for about 1 hour until tender.
