Ingredients

The ribs

  • 2 racks pork baby back ribs (about 4 lbs total)

The rub

  • 2 tbsp mustard
  • 2 tbsp honey
  • ¼ cup paprika
  • 2 tbsp black pepper
  • 2 tbsp garlic powder
  • 2 tbsp chili powder
  • tbsp salt (course sea)
  • 1 tbsp onion flakes (dried)
  • 1 tbsp oregano (dried)
  • 1 tbsp red pepper (ground)

Instructions

  1. Set up your ceramic grill or smoker for indirect cooking and preheat it to 250°F.
  2. Remove the membrane from the ribs and pat them dry.
  3. Mix honey and mustard, then brush it over the ribs.
  4. Whisk the dry spices together and coat the ribs with the rub.
  5. Add hardwood chips to the coals and place the ribs on the grill, bone side down.
  6. Smoke the ribs for 2 hours at 250°F.
  7. Double-wrap the ribs in foil and smoke for another 2 hours.
  8. Remove the foil and place the ribs back on the grill to finish smoking for about 1 hour until tender.
