Ingredients

The ribs

  • 2 racks baby back ribs

The dry rub

  • 2 tablespoons kosher salt
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon brown sugar
  • 2 teaspoons black pepper
  • 1 teaspoon sweet paprika

The sauce

  • 1 cup barbecue sauce

Instructions

  1. Mix the dry rub ingredients in a bowl until well blended.
  2. Rub the ribs with olive oil and apply the dry rub generously on all sides.
  3. Preheat the smoker to 250°F and add wood chips.
  4. Place the ribs bone side down on the smoker rack and cook for 2 hours.
  5. After 2 hours, wrap the ribs in aluminum foil and return to the smoker for 2.5 hours.
  6. Check the internal temperature of the ribs; it should reach 200°F.
  7. Remove the ribs from the smoker and carefully open the foil.
  8. If desired, slather barbecue sauce on the ribs and return to the smoker for an additional 30 minutes.
  9. Let the ribs rest for 15-30 minutes before cutting and serving.
