The sauce
Instructions
- Mix the dry rub ingredients in a bowl until well blended.
- Rub the ribs with olive oil and apply the dry rub generously on all sides.
- Preheat the smoker to 250°F and add wood chips.
- Place the ribs bone side down on the smoker rack and cook for 2 hours.
- After 2 hours, wrap the ribs in aluminum foil and return to the smoker for 2.5 hours.
- Check the internal temperature of the ribs; it should reach 200°F.
- Remove the ribs from the smoker and carefully open the foil.
- If desired, slather barbecue sauce on the ribs and return to the smoker for an additional 30 minutes.
- Let the ribs rest for 15-30 minutes before cutting and serving.
