Ingredients

The ribs

  • 1 rack pork ribs (about 3½ pounds spare ribs)

The rub and marinade

  • 2 tablespoons yellow mustard
  • 2 tablespoons apple cider vinegar
  • 2-3 tablespoons melted butter
  • 1 cup BBQ Sauce
  • 1 recipe Homemade BBQ Rub (or store-bought)
  • 2 teaspoons brown sugar or sweetener
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • to taste salt
  • to taste pepper

For wrapping

  • 1 piece foil

Instructions

  1. Preheat the smoker to 225°F.
  2. Pat the ribs dry and remove the membrane from the back.
  3. Rub mustard on both sides of the ribs and apply the BBQ rub, pressing it into the meat.
  4. Let the ribs rest for at least 20 minutes or refrigerate for up to overnight.
  5. Place the ribs on the smoker, meat side up, and smoke uncovered for 3 hours.
  6. Baste the ribs with melted butter and apple cider vinegar if they appear dry after 1.5 hours.
  7. Wrap the ribs in foil with butter and apple cider vinegar and smoke for an additional 2 hours.
  8. Remove the ribs from the foil and smoke uncovered for another hour, optionally applying BBQ sauce.
  9. Check the texture of the ribs and remove them from the smoker.
  10. Let the ribs rest for 20 minutes before serving.
