Bangin' Oven Baked Baby Back Ribs

Ingredients

Dry Rub

  • tablespoons Diamond Crystal kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon freshly ground black pepper

Ribs

  • 2 racks pork baby back ribs or St. Louis-style pork ribs

Barbecue Sauce

  • ½ cup apricot jam (100% fruit juice sweetened)
  • ¼ cup Whole30 Sriracha
  • 2 tablespoons coconut aminos
  • 2 tablespoons tomato paste
  • 1 teaspoon fresh minced ginger or ¼ teaspoon ground ginger

Instructions

  1. Combine the dry rub ingredients in a small bowl.
  2. Pat the ribs dry and remove the silverskin if necessary.
  3. Apply the dry rub to both sides of the ribs and refrigerate for at least 2 hours.
  4. Preheat the oven to 300°F.
  5. Wrap the ribs in foil and place them on a wire rack in a baking sheet.
  6. Bake the ribs for 1½ hours.
  7. Remove the foil and bake for an additional hour until tender.
  8. Prepare the barbecue sauce by combining the sauce ingredients in a saucepan and simmering.
  9. Broil the ribs for 5 to 8 minutes after brushing with sauce.
  10. Slice the ribs and serve with remaining barbecue sauce.
