Ingredients

  • 2 racks baby back pork ribs
  • ¼ cup spicy brown mustard
  • 1 tablespoon sea salt
  • 1 tablespoon cracked black pepper
  • cups barbecue sauce

Instructions

  1. Preheat the oven to 275°F.
  2. Rinse and pat dry the ribs, removing any silver skin or membrane.
  3. Split the racks in half for easier handling.
  4. Rub mustard onto the tops and sides of the ribs.
  5. Season with sea salt and cracked black pepper.
  6. Wrap the ribs in foil, sealing the edges to make packets.
  7. Place the ribs on a baking sheet bone side down.
  8. Cook in the preheated oven for 2½ hours.
  9. Open the foil packets and expose the ribs.
  10. Coat the ribs liberally with barbecue sauce.
  11. Increase the oven temperature to 400°F and cook for an additional 20-25 minutes.
  12. Set the oven to broil and cook for 3-5 minutes to achieve desired char.
  13. Serve the ribs.
