Instructions
- Preheat a gas grill on high heat and lightly oil the grate.
- In a small bowl, mix together the cumin, paprika, garlic powder, onion powder, chipotle chili powder, cayenne pepper, black pepper, white pepper, and salt.
- Remove the membrane from the back of each rack of ribs using a sharp knife.
- Evenly sprinkle the rub over both sides of the ribs without rubbing it in.
- Stack the ribs on a large piece of foil, fold it up, and seal it.
- Place the foil package on the top rack of the grill, reduce heat to low, and close the lid for 1 hour without lifting it.
- After an hour, open the foil and place the ribs directly on the grill.
- Brush the ribs with BBQ sauce and grill for an additional 5 minutes.
- Serve the ribs as a half rack or cut them between the bones for individual servings, with extra BBQ sauce on the side.
