Whole30 Ribs

Ingredients

The ribs

  • 3 pounds pork baby back ribs
  • 1 cup Whole30 BBQ sauce
  • 1 tablespoon Whole30 BBQ rub
  • 1 teaspoon olive oil

The spice rub

  • ½ tablespoon cumin powder
  • ½ tablespoon paprika powder
  • ½ tablespoon garlic powder
  • ½ tablespoon onion powder
  • ½ tablespoon chipotle chili powder
  • 1 pinch cayenne pepper (up to ¼ teaspoon for spiciness)
  • ½ teaspoon black pepper
  • ½ teaspoon white pepper
  • 4 teaspoons kosher salt

Instructions

  1. Preheat a gas grill on high heat and lightly oil the grate.
  2. In a small bowl, mix together the cumin, paprika, garlic powder, onion powder, chipotle chili powder, cayenne pepper, black pepper, white pepper, and salt.
  3. Remove the membrane from the back of each rack of ribs using a sharp knife.
  4. Evenly sprinkle the rub over both sides of the ribs without rubbing it in.
  5. Stack the ribs on a large piece of foil, fold it up, and seal it.
  6. Place the foil package on the top rack of the grill, reduce heat to low, and close the lid for 1 hour without lifting it.
  7. After an hour, open the foil and place the ribs directly on the grill.
  8. Brush the ribs with BBQ sauce and grill for an additional 5 minutes.
  9. Serve the ribs as a half rack or cut them between the bones for individual servings, with extra BBQ sauce on the side.
