The spice rub

The aromatics

sweet onion, peeled & cut into wedges

garlic, peeled and left whole
Instructions
- Preheat the oven to 325ºF.
- Remove the membrane from the ribs.
- Mix the spice rub ingredients together in a bowl.
- Rub the spice blend onto the ribs and place them in baking dishes.
- Add onion and garlic around the ribs, then add ½ inch of water to the dishes.
- Cover the dishes with aluminum foil and bake for 3 hours.
- Remove from the oven and discard the onions and garlic.
- Preheat the grill to medium-high heat.
- Grill the ribs for 5-7 minutes on each side, slathering with BBQ sauce.
- Let the ribs rest for 5-10 minutes before serving.
