Gochujang Baby Back Ribs

Ingredients

The ribs

  • 2 racks pork back ribs
  • 1 tsp sea salt or Himalayan salt
  • 1 tsp freshly ground black pepper
  • 1 tsp granulated garlic

The Wrap (Texas Crutch)

  • 3 tbsp apple juice
  • ½ stick butter
  • 1 tbsp honey

The Gochujang BBQ Sauce

  • 2-3 cloves garlic
  • 1 tbsp grated ginger
  • cup gochujang
  • ¼ cup mirin
  • ¼ cup brown sugar or Swerve Brown Sugar replacement
  • 1 tbsp sesame oil
  • 1 tbsp low sodium soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp fish sauce (optional)
  • 1 tbsp avocado oil

Instructions

  1. Prepare the BBQ sauce by simmering avocado oil, garlic, and ginger, then adding the remaining ingredients and simmering for 10 minutes.
  2. Remove the membrane from the ribs using a butter knife and paper towel.
  3. Mix salt, pepper, and garlic salt to create a rub and apply it to the ribs.
  4. Preheat the smoker to 250°F and smoke the ribs for 2 hours.
  5. Wrap the ribs in foil with apple juice, butter, and honey, then return to the smoker for another 2 hours.
  6. After 2 hours in foil, remove the ribs and increase the smoker temperature to 325°F.
  7. Glaze the ribs with BBQ sauce and smoke for an additional 30 minutes to 1 hour until the sauce caramelizes.
  8. Garnish with green onions and sesame seeds before serving.
