Roasted Red Pepper Pesto

Ingredients

  • 2 pieces red peppers, halved and roasted
  • 1 clove garlic
  • ½ cup basil
  • ¼ cup shredded Parmesan
  • cup pecans, toasted
  • 2–3 tablespoons olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 350ºF.
  2. Halve and seed the red peppers, then roast them in the oven for 15 minutes with the inside side down.
  3. After 15 minutes, flip the peppers and roast for another 15 minutes.
  4. Remove the peppers from the oven and place them in a bowl, covering with plastic wrap for 10 minutes to steam.
  5. After resting, remove the skins from the peppers and set them aside.
  6. Toast the pecans in a sauté pan until fragrant, about 7-10 minutes.
  7. In a blender, combine the roasted red peppers, garlic, toasted pecans, shredded Parmesan, basil, salt, and pepper.
  8. Blend the mixture and slowly add olive oil to achieve your desired consistency.
  9. Toss the pesto with fresh pasta and serve.
