Ingredients

  • 1 can (20 oz.) green jackfruit
  • 1 tablespoon extra-virgin olive oil
  • ½ red onion diced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ¼ teaspoon garlic powder
  • 2 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 1 tablespoon lime juice
  • ½ teaspoon salt
  • as needed water

Instructions

  1. Drain and rinse the canned jackfruit thoroughly, then shred it into pieces.
  2. Heat olive oil in a skillet over medium heat and sauté the diced onion until softened.
  3. Add cumin, chili powder, and garlic powder to the skillet and stir briefly.
  4. Add the shredded jackfruit to the skillet and stir, adding a splash of water if necessary.
  5. In a bowl, mix tomato paste, maple syrup, lime juice, salt, and enough water to achieve a ketchup-like consistency.
  6. Add the sauce to the skillet and stir to coat the jackfruit, cooking until heated through.
  7. Taste and adjust seasonings as needed before serving in taco shells with desired toppings.
