Instructions
- Drain and rinse the canned jackfruit thoroughly, then shred it into pieces.
- Heat olive oil in a skillet over medium heat and sauté the diced onion until softened.
- Add cumin, chili powder, and garlic powder to the skillet and stir briefly.
- Add the shredded jackfruit to the skillet and stir, adding a splash of water if necessary.
- In a bowl, mix tomato paste, maple syrup, lime juice, salt, and enough water to achieve a ketchup-like consistency.
- Add the sauce to the skillet and stir to coat the jackfruit, cooking until heated through.
- Taste and adjust seasonings as needed before serving in taco shells with desired toppings.
