Ingredients

The filling

  • 1 ½ cups chopped red onion
  • 40 ounces jackfruit
  • 2 tablespoons taco seasoning
  • ¼ - 1 teaspoon sea salt
  • 1 cup roasted salsa

To serve (optional)

  • as needed none cabbage
  • as needed none guacamole or avocado
  • as needed none jalapeño
  • as needed none lime
  • as needed none cilantro
  • as needed none cotija or feta cheese
  • as needed none sliced green onions
  • as needed none salsa
  • as needed none sour cream

Instructions

  1. Sauté the chopped onion in oil or broth until soft, about 5 minutes.
  2. Add the shredded jackfruit, taco seasoning, and salt, and sauté until browned and crisp, about 10-15 minutes.
  3. Stir in the roasted salsa and cook until the mixture is reduced and sticky.
  4. Remove from heat and fill the corn tortillas with the jackfruit mixture.
  5. Serve with your favorite toppings.
