Instructions
- Prepare the mango avocado salsa by dicing the avocado, mango, and tomato into small cubes and mixing them in a bowl with salt, pepper, and lime juice. Refrigerate until needed.
- Drain and rinse the jackfruit, then cut it into smaller pieces using scissors.
- Heat olive oil in a skillet over medium-high heat and sauté the diced onion until softened.
- Add minced garlic and sauté for an additional minute.
- Add the shredded jackfruit and vegetable broth, cover, and simmer over medium-low heat for 10 minutes.
- Uncover and break down any large pieces of jackfruit, then stir in the BBQ sauce and cook uncovered for another 10 minutes until thickened.
- Heat corn tortillas in a skillet until golden on both sides.
- Assemble the tacos by placing the jackfruit mixture on the tortillas, topping with mango avocado salsa, chopped cilantro, and a squeeze of lime juice.
