Ingredients

Mango Avocado Salsa

  • 1 medium avocado
  • 1 cup frozen mango, thawed
  • 1 medium beefsteak tomato
  • ¼ teaspoon coarse salt
  • teaspoon black pepper
  • 1 tablespoon lime juice

BBQ Jackfruit Tacos

  • 2 14 ounce cans green young jackfruit
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • ¼ cup reduced sodium vegetable broth
  • 1 and ⅓ cup sweet BBQ sauce
  • 8 corn tortillas
  • 2 medium limes, cut into wedges
  • to taste chopped cilantro

Instructions

  1. Prepare the mango avocado salsa by dicing the avocado, mango, and tomato into small cubes and mixing them in a bowl with salt, pepper, and lime juice. Refrigerate until needed.
  2. Drain and rinse the jackfruit, then cut it into smaller pieces using scissors.
  3. Heat olive oil in a skillet over medium-high heat and sauté the diced onion until softened.
  4. Add minced garlic and sauté for an additional minute.
  5. Add the shredded jackfruit and vegetable broth, cover, and simmer over medium-low heat for 10 minutes.
  6. Uncover and break down any large pieces of jackfruit, then stir in the BBQ sauce and cook uncovered for another 10 minutes until thickened.
  7. Heat corn tortillas in a skillet until golden on both sides.
  8. Assemble the tacos by placing the jackfruit mixture on the tortillas, topping with mango avocado salsa, chopped cilantro, and a squeeze of lime juice.
