Instructions
- Rinse, drain, and dry the jackfruit, then chop off the core and set aside.
- Mix the BBQ seasoning with the jackfruit and toss to coat.
- Heat oil in a skillet and add the seasoned jackfruit, cooking for 2-3 minutes.
- Add BBQ sauce and thin with water, then simmer covered for about 20-35 minutes.
- While the jackfruit simmers, prepare the slaw by whisking together avocado, sweetener, lemon/lime juice, and seasoning, then mix in the veggies.
- Once the jackfruit is cooked, increase heat to medium-high for 2-3 minutes for extra color.
- Assemble the sandwiches with slaw, jackfruit, and cashews, and serve with extra BBQ sauce.
