Instructions
- Drain and rinse the jackfruit, then cut into smaller pieces.
- Heat olive oil in a skillet and sauté the onion until softened.
- Add garlic and sauté briefly until aromatic.
- Stir in the jackfruit and vegetable broth, cover, and simmer for 10 minutes.
- Uncover and break down any large jackfruit pieces, then add BBQ sauce and cook until thickened.
- Prepare the coleslaw by mixing cabbage and carrots in a bowl.
- Whisk together the dressing ingredients and pour over the cabbage mixture, then refrigerate.
- Toast the burger buns in a skillet with vegan butter.
