Ingredients

The jackfruit

  • 2 cans green young jackfruit
  • 1 tablespoon olive oil
  • 1 small yellow onion
  • 3 cloves garlic
  • ¼ cup reduced sodium vegetable broth
  • 1 ½ cups sweet BBQ sauce

The coleslaw

  • ½ head green cabbage
  • 1 cup shredded carrots
  • ¼ cup vegan mayo
  • 2 tablespoons whole seed mustard
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon white sugar
  • teaspoon salt

The sandwiches

  • 4 medium burger buns
  • 1 teaspoon vegan butter
  • to taste pickles

Instructions

  1. Drain and rinse the jackfruit, then cut into smaller pieces.
  2. Heat olive oil in a skillet and sauté the onion until softened.
  3. Add garlic and sauté briefly until aromatic.
  4. Stir in the jackfruit and vegetable broth, cover, and simmer for 10 minutes.
  5. Uncover and break down any large jackfruit pieces, then add BBQ sauce and cook until thickened.
  6. Prepare the coleslaw by mixing cabbage and carrots in a bowl.
  7. Whisk together the dressing ingredients and pour over the cabbage mixture, then refrigerate.
  8. Toast the burger buns in a skillet with vegan butter.
  9. Assemble the sandwiches with jackfruit, coleslaw, and pickles.
