Instructions
- Mix the apple cider vinegar, coleslaw mix, mayonnaise, salt, and pepper in a bowl and refrigerate.
- Drain and seed the jackfruit, then pull it apart using forks or a hand mixer.
- Combine the jackfruit with barbecue rub, salt, and pepper.
- Heat avocado oil in a skillet over medium-high heat, add jackfruit, and cook until fragrant.
- Reduce heat, add barbecue sauce, cover, and cook until jackfruit is tender.
- Toast the buns in a skillet with vegan butter until golden.
- Serve jackfruit on buns topped with coleslaw and pickles.
