Ingredients

The coleslaw

  • 8 ounce coleslaw mix
  • 2 teaspoons apple cider vinegar
  • 3 tablespoons mayonnaise
  • ½ teaspoon salt
  • pinches pepper

The jackfruit

  • 40 ounces jackfruit
  • 2 teaspoons barbecue rub
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup barbecue sauce
  • 1 tablespoon avocado oil

The buns

  • 4 brioche buns
  • pickles, sliced

Instructions

  1. Mix the apple cider vinegar, coleslaw mix, mayonnaise, salt, and pepper in a bowl and refrigerate.
  2. Drain and seed the jackfruit, then pull it apart using forks or a hand mixer.
  3. Combine the jackfruit with barbecue rub, salt, and pepper.
  4. Heat avocado oil in a skillet over medium-high heat, add jackfruit, and cook until fragrant.
  5. Reduce heat, add barbecue sauce, cover, and cook until jackfruit is tender.
  6. Toast the buns in a skillet with vegan butter until golden.
  7. Serve jackfruit on buns topped with coleslaw and pickles.
