Ingredients

Jackfruit Sandwiches

  • 1 tablespoon extra-virgin olive oil
  • 1 small yellow onion, thinly sliced
  • ¼ teaspoon sea salt
  • 1 20-ounce can jackfruit, drained
  • ½ cup water
  • 8 slider buns or 6 hamburger buns
  • to taste desired fixings (pickles, mustard, serrano peppers, etc.)

Slaw

  • 2 cups shredded cabbage
  • ¼ cup chopped cilantro
  • ½ tablespoon lime juice
  • ½ teaspoon olive oil
  • to taste sea salt and freshly ground black pepper

BBQ Sauce

  • ½ cup BBQ sauce

Instructions

  1. Shred the jackfruit by pulling it apart with your hands, discarding any tough core pieces.
  2. In a skillet, heat olive oil over medium heat, add onion and salt, and cook until soft.
  3. Add the shredded jackfruit to the skillet and cook for 5 minutes, stirring occasionally.
  4. Stir in water and half of the BBQ sauce, cover, and let simmer for 20 minutes.
  5. Remove the cover and stir in the remaining BBQ sauce, reserving some for serving.
  6. In a bowl, combine cabbage, cilantro, lime juice, olive oil, salt, and pepper to make the slaw.
  7. Serve the sliders with jackfruit, remaining BBQ sauce, slaw, and desired fixings.
