Ingredients

BBQ Jackfruit

  • ¼ cup olive oil
  • 14 ounce can young jackfruit in brine, drained and rinsed
  • ½ cup canned chickpeas, drained and rinsed
  • 2 cloves garlic
  • 1 tablespoon brown sugar
  • several good shakes paprika
  • several good shakes chili powder
  • several good shakes onion powder
  • a pinch salt
  • ¼ cup barbecue sauce

Slaw

  • 1 bag pre-made slaw mix
  • thinly sliced cabbage + mayo, lemon juice or vinegar, sugar and salt (if making from scratch)

The Rest

  • toasted buns (brioche recommended)
  • any other toppings (e.g., avocado, pepperoncini, pickles, hot sauce)

Instructions

  1. Heat olive oil in a pan over medium-high heat and shred the jackfruit with a spoon.
  2. In a food processor, pulse chickpeas and garlic until finely chopped, then add to the pan with brown sugar and spices.
  3. Stir the mixture and add barbecue sauce, allowing it to cook until browned.
  4. Assemble the sandwiches by placing the jackfruit mixture on toasted buns, topping with slaw and any additional toppings.
