Instructions
- Prepare the BBQ sauce by blending chipotle peppers, adobo sauce, ketchup, vinegar, garlic, mustard, paprika, cumin, and pepper until smooth.
- Shred the jackfruit and discard any tough pieces. In a skillet, heat olive oil and sauté sliced onion with salt until soft.
- Add the shredded jackfruit to the skillet and cook for 5 minutes, then add water and half of the BBQ sauce. Simmer for 20 minutes.
- Make the slaw by mixing cabbage, cilantro, lime juice, olive oil, and seasonings in a bowl.
- Assemble the sliders with jackfruit, remaining BBQ sauce, slaw, and desired fixings on the buns.
