Ingredients

The scones

  • 1 ½ cups oat flour
  • ¾ cup raw pecans
  • ½ cup coconut sugar
  • 1 tablespoon coconut flour
  • 1 tablespoon baking powder
  • 2 teaspoons cinnamon
  • ½ teaspoon sea salt
  • 6 tablespoons cold unsalted almond butter
  • ¼ cup dairy free milk
  • ¾ cup peeled chopped apples
  • ½ cup chopped pecans

The glaze

  • ½ cup powdered coconut sugar
  • 1 tablespoon dairy free milk
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pulse the dry ingredients in a food processor until the pecans are in small pieces.
  3. Transfer the mixture to a large bowl and cut in the almond butter until crumbly.
  4. Add the milk and chopped apples, mixing until a dough forms.
  5. Shape the dough into a 7-inch diameter circle and cut into eight equal pieces.
  6. Place the pieces on a parchment-lined baking sheet and bake for 11-13 minutes until they start to brown.
  7. Cool for at least 15 minutes before glazing.
  8. Prepare the glaze by mixing all glaze ingredients until thick.
  9. Drizzle the glaze over the cooled scones.
