Instructions
- Whisk together the eggs, almond milk, applesauce, and vanilla in a medium bowl.
- Pulse the all-purpose and whole wheat flours, sugar, baking powder, cinnamon, salt, and nutmeg in a food processor.
- Add the hardened coconut oil to the flour mixture and pulse until just combined.
- Transfer the mixture to a large bowl, stir in the diced apple, and fold in the egg mixture until just combined.
- Turn the dough out onto a floured surface, knead lightly, and form into a ball.
- Divide the dough into two disks, freeze for 20 minutes on a parchment-lined baking sheet.
- Preheat the oven to 400°F and line another baking sheet with parchment paper.
- Cut each disk into 6 wedges, separate them, and arrange on the baking sheet.
- Bake for 15 to 17 minutes until golden brown, then cool on a wire rack.
- Make the glaze by whisking together powdered sugar, almond milk, and vanilla until smooth, then drizzle over the cooled scones and sprinkle with pecans.
