Cranberry Walnut Scones

Ingredients

The scone base

  • 2 cups blanched almond flour
  • ½ teaspoon baking soda
  • 1 large egg
  • 2 tablespoons coconut sugar
  • 1 tablespoon orange zest

The mix-ins

  • ½ cup dried cranberries
  • ½ cup walnuts, chopped

Instructions

  1. 1. In a food processor, pulse together the almond flour and baking soda.
  2. 2. Add the egg, coconut sugar, and orange zest, and pulse until combined.
  3. 3. Stir in the cranberries and walnuts by hand.
  4. 4. Transfer the dough to a parchment paper lined baking sheet and form it into a large circle, about 1-1½ inches thick.
  5. 5. Cut the dough into 8 slices like a pizza.
  6. 6. Move the slices apart using a metal baking spatula, leaving 2 inches between them.
  7. 7. Bake in a preheated oven at 350°F for 12-16 minutes until the edges are browned.
  8. 8. Serve warm.
