Ingredients

The scone dough

  • cups whole wheat flour
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 8 tablespoons unsalted butter
  • cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • cups finely diced granny smith apples

The apple mixture

  • 1 tablespoon butter
  • 1 tablespoon maple syrup
  • ½ teaspoon ground cinnamon
  • 1 dash salt

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
  2. In a sauté pan, melt 1 tablespoon of butter and sauté diced apples until tender, then mix in maple syrup, cinnamon, and salt, and cool in the freezer.
  3. In a food processor, combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Add butter pieces to the processor and pulse until the mixture resembles small peas.
  5. In a bowl, whisk together almond milk, vanilla extract, and egg, then add to the processor and pulse until a dough forms.
  6. On a floured surface, fold the cooled apple mixture into the dough and shape it into a disc.
  7. Cut the dough into 8 triangular pieces and place them on the baking sheet.
  8. Bake for 13-15 minutes, then let cool for 5 minutes before serving.
