Instructions
- Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
- In a sauté pan, melt 1 tablespoon of butter and sauté diced apples until tender, then mix in maple syrup, cinnamon, and salt, and cool in the freezer.
- In a food processor, combine flour, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add butter pieces to the processor and pulse until the mixture resembles small peas.
- In a bowl, whisk together almond milk, vanilla extract, and egg, then add to the processor and pulse until a dough forms.
- On a floured surface, fold the cooled apple mixture into the dough and shape it into a disc.
- Cut the dough into 8 triangular pieces and place them on the baking sheet.
- Bake for 13-15 minutes, then let cool for 5 minutes before serving.
