Ingredients

The scones

  • 2 cups all-purpose flour
  • teaspoons baking powder
  • teaspoons ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter, frozen
  • ½ cup heavy cream
  • 1 large egg
  • ½ cup light or dark brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 heaping cup peeled and chopped apple

Optional toppings

  • ½ cup store-bought or homemade caramel
  • to taste none coarse sugar

Instructions

  1. Whisk together the dry ingredients in a large bowl and grate the frozen butter into the mixture.
  2. Combine the wet ingredients in a separate bowl and drizzle over the dry mixture, then add the chopped apples and mix until moistened.
  3. Dust a work surface with flour, pour the dough onto it, and shape it into an 8-inch disc, cutting it into 8 wedges.
  4. Brush the scones with heavy cream and sprinkle with coarse sugar if desired.
  5. Refrigerate the shaped scones for at least 15 minutes.
  6. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  7. Bake the scones for 22-25 minutes until golden brown, then cool slightly before adding caramel.
