Ingredients

The chicken

  • 2 pounds boneless skinless chicken thighs or breast
  • to taste salt and pepper
  • 2 teaspoons Creole seasoning blend or Italian seasoning blend

The toppings

  • 4-6 slices bacon, chopped, cooked crispy and crumbled
  • 1-2 tablespoons vegetable oil
  • 1 8-ounce package cream cheese, cut into smaller chunks
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1-2 tablespoons ranch seasoning mix
  • 1 cup cheddar cheese
  • ½ cup chicken broth
  • 2 green onions, diced

Instructions

  1. Preheat the oven to 400°F and grease a baking dish.
  2. Season the chicken with salt, pepper, and seasoning blend.
  3. In a pan, cook the bacon until crispy, then set aside.
  4. Use the bacon fat and vegetable oil to brown the chicken on both sides.
  5. Transfer the browned chicken to the baking dish.
  6. Mix cream cheese, garlic powder, onion powder, and ranch seasoning in a bowl.
  7. Add shredded cheese to the mixture and adjust seasonings.
  8. Spread the cream cheese mixture over the chicken, then top with bacon and remaining cheese.
  9. Pour chicken broth into the baking dish and bake for about 15 minutes until the chicken is cooked through.
  10. Garnish with green onions before serving.
