Coconut Lime Grilled Chicken and Rice

Ingredients

Coconut Lime Sauce

  • ¼ cup lime juice and zest (about 2-3 limes)
  • 2 tablespoons fish sauce
  • ¼ cup full fat coconut milk
  • 1 tablespoon brown sugar
  • 1 tablespoon lemongrass paste
  • ½ pepper jalapeño (ribs and seeds removed)
  • 1 clove garlic
  • 1 small bundle fresh cilantro
  • 1 small bundle fresh mint

Everything Else

  • 1 lb boneless skinless chicken thighs
  • cups uncooked rice

Instructions

  1. Blend all sauce ingredients in a food processor until smooth.
  2. Marinate the chicken in half of the sauce for 30 minutes.
  3. Preheat the grill to medium-high heat and cook the chicken for about 4 minutes per side until fully cooked.
  4. Let the chicken rest for a few minutes before serving.
  5. Serve the grilled chicken with rice and drizzle with the remaining sauce.
