Ingredients

The base

  • 1 teaspoon olive oil
  • cup chopped onions
  • 2 cloves garlic, minced
  • 15 oz can tomato sauce
  • 8 oz can tomato sauce
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon lemon juice
  • ½ teaspoon sugar
  • ¼ teaspoon crushed red pepper flakes
  • 2 oz 1/3 less fat cream cheese, cubed
  • 1 cup shredded 2% Mozzarella cheese
  • 3 cups cooked quinoa
  • 10 oz cooked, shredded chicken breast

The toppings

  • 6 tablespoons grated Parmesan cheese, divided
  • 3 tablespoons seasoned bread crumbs

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish with cooking spray.
  2. Heat olive oil in a skillet over medium heat, then add onions and cook until translucent.
  3. Add minced garlic and cook until fragrant.
  4. Stir in both cans of tomato sauce and reduce heat, then add seasonings and cream cheese until melted.
  5. Combine cooked quinoa and shredded chicken in a bowl, then mix in the sauce until well coated.
  6. Transfer the mixture to the baking dish and top with remaining cheese and bread crumbs.
  7. Bake for 35 minutes until hot and bubbly.
