Instructions
- Preheat the oven to 350°F and prepare a baking dish with cooking spray.
- Heat olive oil in a skillet over medium heat, then add onions and cook until translucent.
- Add minced garlic and cook until fragrant.
- Stir in both cans of tomato sauce and reduce heat, then add seasonings and cream cheese until melted.
- Combine cooked quinoa and shredded chicken in a bowl, then mix in the sauce until well coated.
- Transfer the mixture to the baking dish and top with remaining cheese and bread crumbs.
- Bake for 35 minutes until hot and bubbly.
