Caprese Chicken Quinoa Bake

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Rinse the quinoa and cook it in a saucepan according to package directions, using chicken broth instead of water.
- While the quinoa is cooking, bake the chicken for 20 minutes at 400°F.
- Once cooked, layer the quinoa in the bottom of a 9x13 casserole dish.
- Sprinkle spinach on top, followed by the cubed chicken.
- Pour the marinara sauce over the mixture, then add salt, pepper, oregano, garlic powder, and parmesan cheese. Mix well.
- Layer alternating slices of mozzarella and tomatoes on top.
- Bake for 30 minutes at 400°F, then top with fresh basil before serving.
