Caprese Chicken Quinoa Bake

Ingredients

  • 3 small chicken breasts
  • 1 ¼ cups dry quinoa
  • 2 ¼ cups chicken broth
  • 1 cup spinach
  • 2 cups marinara sauce
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 tsp oregano
  • 1 tsp garlic powder
  • ½ cup grated parmesan cheese
  • 16 oz mozzarella
  • 2 large beefsteak tomatoes
  • to taste fresh basil

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Rinse the quinoa and cook it in a saucepan according to package directions, using chicken broth instead of water.
  3. While the quinoa is cooking, bake the chicken for 20 minutes at 400°F.
  4. Once cooked, layer the quinoa in the bottom of a 9x13 casserole dish.
  5. Sprinkle spinach on top, followed by the cubed chicken.
  6. Pour the marinara sauce over the mixture, then add salt, pepper, oregano, garlic powder, and parmesan cheese. Mix well.
  7. Layer alternating slices of mozzarella and tomatoes on top.
  8. Bake for 30 minutes at 400°F, then top with fresh basil before serving.
