Sheet Pan Balsamic Salmon with Asparagus & Brussels Sprouts

balsamic vinegar

Instructions
- Preheat the oven to 450°F.
- In a small bowl, mix honey, balsamic vinegar, dijon mustard, garlic, fresh thyme, and salt.
- In a large bowl, combine brussels sprouts, asparagus, baby potatoes, red onion, cherry tomatoes, and olive oil. Add some of the honey balsamic mixture and toss to coat.
- Spread the vegetables on a baking sheet in a single layer and bake for 10 minutes.
- Remove from the oven and place salmon filets on top of the vegetables, brushing them with the remaining honey balsamic mixture.
- Return to the oven and bake for another 10 minutes.
- Switch to broiler on high for 3-4 minutes to brown the top of the salmon.
- Remove from the oven and serve.
