Ingredients

The main ingredients

  • 4 filets salmon (skin on)
  • 16 oz. brussels sprouts (halved)
  • 1 bunch asparagus (trimmed and cut in half)
  • 16 oz. baby potatoes
  • ½ red onion cubes
  • 1 cup cherry tomatoes

The sauce

  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh thyme
  • ½ teaspoon sea salt

Instructions

  1. Preheat the oven to 450°F.
  2. In a small bowl, mix honey, balsamic vinegar, dijon mustard, garlic, fresh thyme, and salt.
  3. In a large bowl, combine brussels sprouts, asparagus, baby potatoes, red onion, cherry tomatoes, and olive oil. Add some of the honey balsamic mixture and toss to coat.
  4. Spread the vegetables on a baking sheet in a single layer and bake for 10 minutes.
  5. Remove from the oven and place salmon filets on top of the vegetables, brushing them with the remaining honey balsamic mixture.
  6. Return to the oven and bake for another 10 minutes.
  7. Switch to broiler on high for 3-4 minutes to brown the top of the salmon.
  8. Remove from the oven and serve.
