Sheet Pan Balsamic Vinegar Salmon

Ingredients

The salmon

  • 20 oz skinless salmon, cut into 4 pieces

The vegetables

  • 1 pound asparagus
  • 2 cups zucchini, sliced
  • ½ each red bell pepper, sliced
  • ½ each yellow pepper, sliced
  • 3 cloves garlic, chopped

The seasonings and oils

  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp rosemary, dried
  • 1 tsp parsley, chopped
  • 1 tsp McCormick's Grill Mates BBQ Seasoning
  • 1 tsp McCormick's Grill Mates Salmon Rub (or Chicken Seasoning, salt, and pepper to taste)
  • 1 tsp paprika

Instructions

  1. Preheat the oven to 425°F.
  2. Brush both sides of the salmon with olive oil and 1 tablespoon of balsamic vinegar, then season with the spices and sprinkle paprika on top.
  3. In a large bowl, combine the vegetables with the remaining balsamic vinegar, salt, and pepper, and toss to coat.
  4. Line a baking sheet with parchment paper and arrange the salmon and veggies on it, covering with another piece of parchment.
  5. Bake for 10 minutes, then remove the top parchment and bake for an additional 5 minutes.
  6. Allow to cool before serving.
