Ingredients

The main ingredients

  • 3 to 4 fillets salmon
  • 2 cups Brussels sprouts
  • 1 cup fresh blueberries
  • 2 lemons lemons

The seasonings and oils

  • ¼ to ⅓ cup light olive oil
  • ¼ to ½ teaspoon black pepper
  • Kosher salt to taste Kosher salt
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic
  • ¼ to ⅓ cup chopped fresh basil

Instructions

  1. Preheat the oven to 400°F and prepare a sheet pan lined with parchment paper.
  2. Place the salmon fillets on the sheet pan and arrange the quartered Brussels sprouts around them, seasoning with salt.
  3. In a bowl, mash the blueberries with a fork and mix in olive oil, basil, balsamic vinegar, garlic, black pepper, and a dash of salt.
  4. Drizzle olive oil over the salmon and Brussels sprouts, then spoon the blueberry mixture over the salmon.
  5. Squeeze fresh lemon juice over everything and add lemon slices on top of the veggies.
  6. Bake in the oven for 15 minutes, then broil for an additional 1 to 2 minutes for extra crispiness.
  7. Serve immediately and enjoy.
