Instructions
- Preheat the oven to 400°F and prepare a sheet pan lined with parchment paper.
- Place the salmon fillets on the sheet pan and arrange the quartered Brussels sprouts around them, seasoning with salt.
- In a bowl, mash the blueberries with a fork and mix in olive oil, basil, balsamic vinegar, garlic, black pepper, and a dash of salt.
- Drizzle olive oil over the salmon and Brussels sprouts, then spoon the blueberry mixture over the salmon.
- Squeeze fresh lemon juice over everything and add lemon slices on top of the veggies.
- Bake in the oven for 15 minutes, then broil for an additional 1 to 2 minutes for extra crispiness.
- Serve immediately and enjoy.
