Ingredients

The salmon

  • 4 fillets salmon
  • ½ cup maple syrup
  • cup low sodium soy sauce
  • ¼ cup orange juice
  • ¼-½ teaspoon cayenne pepper
  • to taste kosher salt and black pepper

The vegetables

  • ½ pound brussels sprouts
  • 2 pears or apples
  • 2 tablespoons olive oil
  • to taste pomegranate arils for garnish (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. In a baking dish, whisk together the maple syrup, soy sauce, orange juice, cayenne, and pepper.
  3. Place the salmon in the sauce, flesh side down, and let it sit for 15 minutes.
  4. On a baking sheet, combine the brussels sprouts, pears, olive oil, salt, and pepper, and toss to coat.
  5. Roast the vegetables in the oven for 15 minutes.
  6. After 15 minutes, add the salmon to the baking sheet with the vegetables and roast for an additional 10-15 minutes until the salmon is cooked to your liking.
  7. Meanwhile, pour the remaining maple sauce into a saucepan, bring to a boil, and cook for 3-5 minutes until reduced to a glaze.
  8. Drizzle the glaze over the salmon and serve with the roasted vegetables.
