Maple Bourbon Glazed Salmon

Ingredients

The glaze

  • ½ cup maple syrup or sugar free maple syrup
  • ¼ to ⅓ cup coconut sugar or brown sugar
  • ¼ cup pure bourbon whiskey
  • 1 Tablespoon orange juice or 1 teaspoon apple cider vinegar
  • ¼ teaspoon ground ginger
  • pinch nutmeg (optional)
  • 3 Tablespoons chopped nuts, roasted and salted (optional)

The salmon

  • 16 ounces salmon (3 to 4 filets)
  • to taste Kosher salt
  • to taste black pepper

Instructions

  1. Whisk together the maple syrup, coconut sugar, bourbon, orange juice, ginger, and optional nutmeg in a saucepan and bring to a light boil.
  2. Reduce heat and simmer for 20 to 30 minutes until the glaze thickens.
  3. Preheat the broiler and prepare a baking sheet with aluminum foil and a broiler pan.
  4. Place the salmon filets on the broiler pan, season with salt and pepper, and brush with a small amount of glaze.
  5. Broil the salmon for 2 to 3 minutes, then remove from the oven.
  6. Brush each filet with additional glaze and return to the oven at 400°F for 5 to 7 minutes until cooked through.
  7. While the salmon bakes, add nuts to the glaze and simmer for 5 minutes.
  8. Serve the salmon topped with the thickened pecan maple glaze.
