Maple Bourbon Glazed Salmon

coconut sugar or brown sugar

pure bourbon whiskey

orange juice or 1 teaspoon apple cider vinegar

chopped nuts, roasted and salted (optional)
The salmon

salmon (3 to 4 filets)

Instructions
- In a saucepan, whisk together the glaze ingredients and bring to a light boil.
- Reduce heat and simmer until the glaze thickens.
- Preheat the broiler and prepare a baking sheet with aluminum foil.
- Place the salmon filets on the broiler pan, season with salt and pepper, and brush with glaze.
- Broil the salmon for 2 to 3 minutes, then remove from the oven.
- Brush with additional glaze and return to the oven until cooked through.
- Simmer nuts in the leftover glaze while the salmon bakes.
- Serve the salmon topped with the thickened nut glaze.
