Maple Bourbon Glazed Salmon

Ingredients

The glaze

  • ½ cup maple syrup or sugar free maple syrup
  • ¼ to ⅓ cup coconut sugar or brown sugar
  • ¼ cup pure bourbon whiskey
  • 1 Tablespoon orange juice or 1 teaspoon apple cider vinegar
  • ¼ teaspoon ground ginger
  • a pinch nutmeg (optional)
  • 3 Tablespoons chopped nuts, roasted and salted (optional)

The salmon

  • 16 ounces salmon (3 to 4 filets)
  • to taste Kosher salt
  • to taste black pepper

Instructions

  1. In a saucepan, whisk together the glaze ingredients and bring to a light boil.
  2. Reduce heat and simmer until the glaze thickens.
  3. Preheat the broiler and prepare a baking sheet with aluminum foil.
  4. Place the salmon filets on the broiler pan, season with salt and pepper, and brush with glaze.
  5. Broil the salmon for 2 to 3 minutes, then remove from the oven.
  6. Brush with additional glaze and return to the oven until cooked through.
  7. Simmer nuts in the leftover glaze while the salmon bakes.
  8. Serve the salmon topped with the thickened nut glaze.
