Ingredients

The salmon

  • 12 oz salmon cut into 2 fillets
  • 1 Tbsp grass-fed butter or ghee melted
  • 1/16 tsp black pepper freshly ground
  • 1 tsp sea salt divided

The glaze

  • ½ cup bourbon
  • 4 Tbsp maple syrup
  • ½ tsp chili powder
  • 1 pinch cayenne pepper

For garnish

  • 1 green onion thinly sliced
  • 1 Tbsp fresh parsley chopped

Instructions

  1. Preheat oven to 425ºF (218ºC).
  2. Rinse salmon under cold water and pat dry.
  3. Grease a baking dish with butter or ghee.
  4. Place salmon fillets in the dish and brush with remaining butter or ghee.
  5. Sprinkle with black pepper and ½ tsp sea salt.
  6. Prepare the glaze by combining bourbon, maple syrup, chili powder, ½ tsp sea salt, and cayenne pepper in a small saucepan.
  7. Bring the mixture to a boil over medium heat, stirring occasionally.
  8. Reduce heat and simmer for 10 to 11 minutes until thickened, stirring and scraping the bottom of the pan occasionally.
  9. While the glaze is reducing, bake the salmon for about 6-8 minutes until opaque and flaky.
  10. Remove salmon from the oven, spoon glaze over the fillets, and top with green onion and parsley.
  11. Serve immediately.
