Ingredients

The pasta

  • 1 16-ounce box Fusilli pasta

The dressing

  • cup extra virgin olive oil
  • cup red wine vinegar
  • 2 cloves garlic
  • 1 teaspoon dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

The salad

  • 1 14-ounce can quartered artichoke hearts
  • ½ cup Kalamata olives
  • cup bell pepper
  • 1 cup baby tomatoes
  • ½ cup celery
  • ½ cup red onion
  • ½ cup fresh basil

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, whisk together olive oil, red wine vinegar, garlic, mustard, Italian seasoning, salt, and pepper in a large bowl.
  3. Drain the pasta and add it to the dressing, tossing to coat and letting it cool.
  4. Add artichoke hearts, olives, bell pepper, tomatoes, celery, onion, and basil to the pasta and stir well to combine.
  5. Serve immediately or chill until ready to serve.
