Ingredients

The salad

  • 1 pound fusilli or rotini pasta
  • 2 cups cherry tomatoes, halved
  • cups mini fresh mozzarella cheese balls
  • 1 medium red bell pepper, diced
  • ½ English cucumber diced
  • 1 cup thinly sliced red onion
  • ¾ cup kalamata olives, pitted and halved
  • ¾ cup sliced pepperoncini
  • ½ cup chopped fresh parsley
  • teaspoons sea salt
  • to taste freshly ground black pepper
  • 1 cup fresh basil leaves

The dressing

  • to taste extra-virgin olive oil
  • 1 recipe Italian Dressing

Instructions

  1. 1. Boil salted water and cook the pasta until slightly past al dente, then drain and toss with olive oil.
  2. 2. Let the pasta cool to room temperature.
  3. 3. In a large bowl, combine the cooled pasta with cherry tomatoes, mozzarella, bell pepper, cucumber, red onion, olives, pepperoncini, and parsley.
  4. 4. Add the dressing, salt, and pepper, and toss to combine.
  5. 5. Stir in basil and adjust seasoning to taste, garnishing with more basil before serving.
